Persimmon Hoshigaki

Hoshigaki persimmons in the morning sun.  So beautiful!  I had to paint a still life of one yesterday, could not resist.  That color, that shape!

In case you’re not familiar, hoshigaki is a traditional method for preserving fruit. This represents probably the most potential for utilizing the harvest, in our experience with growing persimmons, so far.

Often in the past, birds would get to them if we let them tree ripen. But, since hoshigaki requires that you start with fruit that is not yet fully ripe, it removes that likelihood.

To be fair, I should mention that this is J, our eldest, undertaking this process.
